    Quesadillas meet hot dogs for a fun twist that’s cheesy, crispy and perfect for dunking into a mix of dips and sauces.

  1. Cook the sausages according to packet instructions.
  2. Trim the ends of either side of the wraps so that a sausage fits from end to end. Scatter one trimmed mini plain tortilla wrap with 50g of the cheddar. Finely chop the spring onions and chilli (removing the seeds) and sprinkle one sixth of each over, with a big pinch of smoked paprika. Top with another trimmed tortilla wrap.
  3. Heat 1 teaspoon of oil in a large frying pan. Add the sandwiched tortillas to the pan and cook for 1-1½ minutes until golden on the underside. Carefully flip and cook for another 1-1 ½ minutes until golden on the underside and the cheese has melted. Immediately transfer to a chopping board. Spread one side with a scant tablespoon of the smashed avocado. Add a hot dog at one end and tightly roll to the other. Set aside and repeat with the remaining tortillas, fillings and sausages.
  4. Serve the quesadilla dogs with the Tex Mex dips, ketchup and mayo.
